Italian parsley is a leafy herb with a strong aroma with hints of citrus, clove and nutmeg and an earthy taste. This leafy herb is a good source of vitamins A, B, C and K, as well as iron, potassium, folate and copper. Containing essential oils such as limonene, eugenol and myristicin, this magical herb features antifungal, antiseptic, and anti-inflammatory properties, and is also a digestive aid and pallet cleanser.
Traditionally included in a chef’s ‘bouquet garni,’ chefs love adding Italian parsley to soups, stocks, brines and sauces to infuse flavour. Chop fresh sprigs for a fresh green taste - use it in marinades, dressings, coleslaws, potato dishes, tabbouleh or mix with rice and dill for stuffed grape leaves.
